An illusion
One of the beauty of One Piece is that we know that all the characters have the potential to deploy an extremely large range of emotions and action. Even when Oda creates the most meaningless protagonist, we know that this protagonist has the potential to make us cry, to make us laugh or make us root for them.
The thing is, all of this is an illusion based on the writing skills of the author. Most characters are based on a single layered characterization, even very powerful character (like Mihawk for example) can be very one dimensional. Most of the time its an archetype or one character traits. Only the most important characters gets a multi layered characterization.
All the strawhats are such characters. This means that every one of them can depict different range of emotions or actions under different situations and that they have all gone through a lot, might it be harship, joy, sadness or determination.
A character can't really become a strawhat without a multi layered characterization. It would be a problem for the story.
